How to Make Kimchi Fried Rice

In fact, Kimchi fried rice is a dish that I cook when I have a lot of vegetables left at home and I am lazy to cook.
I'm a little embarrassed to post this recipe because it's so easy.

Still, it may be unfamiliar to people in other countries, so I'm going to show you how to cook my own kimchi fried rice.

 

Of course, the main ingredients of kimchi fried rice are rice and kimchi.
It doesn't seem to matter much if you add non-sticky rice such as jasmine rice, but if you add sticky rice, you will definitely feel the taste of Koreans.
And kimchi! Kimchi is a must in Korea.
I once bought kimchi at a mart, in States, and I was surprised to see it selling things that are not really the taste of kimchi. TOTALLY NOT. So when you buy kimchi, check if it is made by Koreans. Or ask Koreans around you what delicious kimchi is at the mart. They will answer with great enthusiasm. (Maybe they can give you homemade kimchi !)

 

This recipe can be a good meal with some meat, ham, sausages... etc but, it also can be a delicious VEGAN meal.

Just take out the meat from the recipe, and add oil whatever you like :)

In addition, this recipe is also great for removing leftover ingredients !

Let's start!

 

INGREDIENTS

 - Kimchi *Required* (a big fistful of)

 - Onions or green onions (both, if you have them)

 - Crushed garlic (4 pieces)

 - Meat, ham, sausages, etc. (No need)

 - Oil (anything, but we have to stir-fry it, so avoid sesame oil.)

   (Also, if the meat is added, oil is not required.)

 - Any vegetables left in the house (I put a green pumpkin, carrot, perilla(Sesame) leaf)

 - 1 spoon of red pepper paste(gochujang)
   (You don't have to buy it if you don't have it at home,

    but gochujang is useful in many ways if you keep it at home, so I recommend you buy one!)

 - 2 spoons of Mirim (you don't have to put it in, but it's better especially if you put meat in it)

 - 2 spoons of soy sauce (In fact I roughly put it in my eye and taste. As long as it's not salty.)

 - 2 servings of rice (If you add a lot of vegetables, you can add just a little bit of rice. It's a lil trick for people who are on a diet.)

 

INSTRUCTIONS

 1. First, wash all the vegetables well and cut them into small pieces.

    If other ingredients (meat, spam, etc.) are available, cut them into small pieces as well. 
    (Sizes are your preference. I like small ones with fried rice.)

I put a green pumpkin, carrot, perilla(Sesame) leaf with some leftover hams.

 2. Pour oil over the wok, stir-fry onions(/green onions), and garlic first. (if you have meat, stir-fry the meat together.)

 3. When the onion is cooked, add Kimchi first. After that, add other vegetables and ingredients and stir-fry them.
    (Potatoes or carrots first, mushrooms or leafy vegetables later)

 4. If the ingredients are slightly cooked(hot), add 1 spoon of red pepper paste and 2 spoons of Mirim and stir-fry again.
 5. Then throw the rice. Stir-fry it well.
 6. If you have cheese, add cheese. If you have eggs, let's add fried eggs. It's really delicious.
 7. Kimchi fried rice complete! Yum yum
